Restaurang ÄNG by Norm Architects fosters an all-sensory restaurant experience in rural Sweden

Integrated into a rural Swedish Meadow, Restaurang ÄNG by Norm Architects is a modern greenhouse containing a progressive restaurant concept.

Merging rural architectural principles with the more contemporary experience of ÄNG, the concept comprises a bar and lounge area on the ground floor as well as a wine cellar, dining area, and wine lounge on the basement level. The overall aim was to create an elevated experience around food and wine, adding to the sensory experience of Swedish haute cuisine.

The all-glass facades of the greenhouse allow for sunlight as well as the feeling of being in the Swedish landscape to enter the premises. This rural and wild feeling is mirrored in the architect’s choice of materials, which includes pure oak for bespoke furniture and canvas wall panels. Dinesen, a leading Danish manufacturer, provided the high-quality wooden planks used for the floors and a portion of the wall cladding.

The architects explain that the overall vision is an elevated and refined experience centered around a sensorial experience of food. Striking a balance between rural and local, and refined and elevated.

“ It’s not enough to cook great food – the staging of the food, whether it’s the architecture, the nature that surrounds you, or the plate you eat from. Whether it’s the smell of the room or the acoustics – they are all just as important for your experience of the food as the dish itself.” the architects said in a statement.
